Vegan Banana Bread

An egg & dairy free take on your grandmother's favorite banana bread recipe. Enjoy this comforting and delicious vegan banana bread guilt-free!

INGREDIENTS:

1 1/2 cups mashed bananas (ripe)

2 cups white whole-wheat flour

2 teaspoons baking powder

5 tablespoons water

2 tablespoons Eternae by Nature Organic Milled Flaxseeds

3/4 cup unsweetened almond milk

1/3 cup canola oil

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt


DIRECTIONS:

Preheat oven to 350°F. Butter a 4x8 inch loaf pan. Stir the water and milled flaxseed together in a small bowl and let the mixture rest for 5 minutes. Whisk together the almond milk, sugar, oil, vanilla and flaxseed mixture (or "flax egg") in a bowl. Stir in mashed bananas. In a separate large bowl, combine flour, baking powder, cinnamon and salt. Then, gradually add the wet ingredients to the dry ingredients while stirring. Transfer the batter to the prepared pan. Bake until golden (approx. 50-60 minutes). Test if the bread is ready by inserting a toothpick in the middle - if it comes out clean, your bread is ready. Let the banana bread rest for 15 minutes before serving and enjoy!
