Pumpkin Coconut Chia Pudding

This seasonal delight is the perfect way to satisfy your pumpkin spice cravings while getting your superfood fix.

INGREDIENTS:

1/4 cup chia seeds

13.5 ounce can of coconut milk

1/2 cup pumpkin puree

1 teaspoon of pumpkin pie spice

1 teaspoon vanilla extract

2 tablespoons maple syrup (or sweetener of choice) 2 tablespoons of toasted coconut flakes (for topping)

2 teaspoons of almond butter + 1 teaspoon coconut butter (for topping)

DIRECTIONS:

In a bowl, stir together chia, coconut milk, pumpkin puree, pumpkin spice, vanilla extract and maple syrup.Transfer the mixture in a container, glass or small jar and refrigerate overnight or until the consistency is solid and pudding-like.

When ready to serve, stir together the almond butter and coconut butter and microwave for 15-30 seconds. Add chia pudding to small jar or glass, top with coconut flakes and drizzle the nut butter mixture.
