These carrot apple flax muffins are naturally sweetened and delightfully delicious - making the perfect grab-and-go breakfast or hearty snack!
For 20-25 Mini Muffins - 15 min preparation - 40 min oven time
2 carrots peeled
2 apples peeled
1/2 cup of unsweetened apple sauce
1/4 cup Eternae by Nature Organic Milled Flax Seeds 1/4 cup of extra virgin olive oil
2 egg whites 1 1/2 cups of baking flour
1/3 cup coconut sugar 1 1/2 tsp baking powder 1 tsp cinnamon
Preheating the oven at 365°F. Spray the mini-muffin pan with non-stick cooking spray or butter.
Add the carrots and apples in a food processor or use a mandolin to obtain shredded pieces
and set aside in a small bowl.
In a medium size bowl, stir together the egg whites, olive oil, apple sauce and cinnamon. In the same bowl, add the Eternae by Nature Organic Milled Flax Seeds, baking powder and coconut sugar. Stir again, while slowly incorporate the flour to the mixture. Add the apples and carrots shreds.
Finally, fill a mini-muffin pan with the mixture (3/4 full) and place in the oven for 20 minutes maximum or until a toothpick comes out of the center clean.
